(ITC, Phnom Penh): From July 3 to July 12, 2022, five lecturers of Institute of Technology of Cambodia provided the skill training program on βFood Processing by Fermentation Methodβ to 14 trainees coming from 6 different secondary schools under the STEM Education Local Partnership Program of Higher Education Improvement Project (HEIP). This training is divided into three parts such as theory, practical, and business plan development.
Theory training: trainees were trained on the Principal of food fermentation, Processing techniques, Quality and safety of the products, Sensory evaluation, and Proper storage of this products.
Practical training: trainers explained on the method and train the trainee how to produce the fermented cucumber and fermented fish (nem trey) with quality and safety. After that, trainee practiced by themself to produce the quality and safe fermented cucumber and fermented fish (nem trey) with the satisfactory products as expected.
Business plan: trainees were trained on how to prepare and apply the business plans and preparation the individual business plan in order to operate the business for income generation.
