Kasetsart University (KU) is one of international partner universities under higher education partnership program of Higher Education Improvement Project (HEIP). HEIP-ITC-SGA#05 “Development of Fermentation Process of Cambodian Soy Sauce” is a sub-project in Component 2: Improving Research in STEM and Agriculture, and it is in research collaboration with KU. Based on the agreed activity plan in 2022, two ITC staffs (Dr. Tan Reasmey and Dr. Peng Chanthol) have conducted the overseas mission to KU, Bangkok, Thailand from 21 to 27 August 2022 for research discussion and visiting soy sauce companies in Thailand. Moreover, the 2nd year Ph.D student (Mr. Ly Luka) under SGA#05 is also having a 3-month training at KU starting from 19 August to 12 November 2022.
The objectives of this overseas mission aimed to:
- Join the research discussion with partners at KU on soy sauce;
- Demonstrate soy sauce fermentation by research partners at KU;
- Visit the biggest and small soy sauce companies in Thailand;
- Discuss the possibility of joint double-degree program between ITC and KU for master’s student.
The activities during the mission were as the followings:
On day 1, ITC teams had a research discussion with Assoc. Prof. Pramuk Parakulsuksati and his team about the visit to soy sauce companies. Lab visits were also done at AI Building 5 and AI Building 3 under Department of Biotechnology. On day 2, ITC teams had a research discussion and demonstration of soy sauce fermentation process by Assoc. Prof. Werasit Sanpamongkoichai. In addition, ITC team also had a discussion with Dr. Aunchalee Aussanasuwannakul for a joint double degree program for Cambodian master’s student and a visit to food product shop of the Institute of Food Research and Product Development.
A visit to Yan Wal Yun Co., Ltd, which is the leading manufacturer of Seasoning Sauces in Thailand, under “Healthyboy brand”, “I-Chef” and “Maxchup”. This company is located at Soi Wat Phai Ngoen, Thung Wat Don, Sathon, Bangkok, Thailand.
A visit to Tawantip Food Products Co., Ltd which is located at Tambon Suan Luang, Amphoe Krathum Baen, Changwat Samut Sakhon, Samut Sakhon, Thailand. And on day 5, ITC team had prepared raw materials and materials for soy sauce fermentation in the lab.
